Instructions:

Basic western NC Sauce-

  • 1 & 1/2 cups ketchup
  • 1/4 cup yellow mustard
  • 3 tablespoons brown sugar
  • 1 & 1/2 teaspoons salt
  • 1 teaspoon onion flakes
  • 1 teaspoon cayenne powder
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Basic eastern NC Sauce (dip)-

  • 1 & 1/2 cup cider vinegar
  • 2 teaspoons salt
  • 2 teaspoons brown sugar
  • 1 1/2 teaspoons red pepper flakes
  • 1 teaspoon cayenne pepper or 1 teaspoon hot pepper sauce

Basic Kansas City Sauce-

  • 1 & 1/2 cups ketchup
  • 1/3 cup brown sugar
  • 1/4 cup white vinegar
  • 2 tablespoons oil
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder

Basic SC mustard Sauce-

  • 3/4 cup yellow mustard
  • 3/4 cup honey
  • 1/3 cup white vinegar
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper or 1 teaspoon hot pepper sauce

Basic Memphis Sauce (dip)-

  • 1 & 1/2 cups ketchup
  • 1 cup chopped onion
  • 3/4 cup white vinegar
  • 1/3 cup brown sugar
  • 1/4 teaspoon garlic powder
  • 1/4 cup yellow mustard
  • 1/2 teaspoon hot pepper sauce

Basic Texas Sauce (dip)-

  • 1 & 1/2 cups ketchup
  • 1/2 cup chopped onion
  • 1/8 cup brown sugar
  • 2 & 1/2 tablespoons cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon red pepper flakes
  • 1 teaspoon chili powder

Basic white Sauce-

  • 1 cup mayonnaise
  • 1/4 cup white vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons white sugar
  • 2 teaspoons black pepper
  • 2 teaspoons salt
